About the Journal

Aim: Global Journal of Food Science & Human Nutrition provides forum for studies dealing with the applied and fundamental aspects of food science and human nutrition. We will publish original research papers, reviews, and short communication on new findings. Our aim is to   encourage and provide author-friendly platform to scientists, researchers and other food and nutrition professionals to publish their theoretical and experimental results.

Scope

The scope of the journal is divided into two major research areas:

  1. Food science and technology
  • Food chemistry and physical properties
  • Food safety and security
  • Food Microbiology
  • Food analysis
  • Sensory studies
  1. Human Nutrition
  • Micro and macronutrients
  • Human nutrition
  • Functional food and nutraceuticals
  • Public health
  • Nutrigenomics

Ethics in Publication

Consider following ethic topics when publishing:

If the work involves chemical procedures or the use of animal or human subjects, authorship of the paper, originality and plagiarism, data access, multiple, redundant or concurrent publication, acknowledgement of sources, disclosure and conflict of interest, statements of compliance, and ethics committee approval are required.

Research Involving Human Subject

When reporting on research involving human subjects, human material, human tissues, or human data, writers must state that the investigations were conducted in accordance with the 1975 Helsinki Declaration (https://www.wma.net/what-we-do/medical-ethics/declaration-of-helsinki/), as updated in 2013. According to point 23 of this statement, before to conducting the research, a clearance from the local institutional review board (IRB) or other suitable ethical committee must be acquired to ensure the study satisfies national and international criteria.

Non-interventional studies (e.g., surveys, questionnaires, social media research) must clearly notify all participants if anonymity is guaranteed, why the study is being undertaken, how their data will be used, and if there are any risks involved. Prior to starting the study, ethical permission from an appropriate ethics commission, as with any human research, must be acquired. If ethical clearance is not necessary, authors must either get an exemption from the ethics committee or reference local or national law indicating that ethics approval is not required for this sort of study.

The Editors are influenced by safety concerns, compliance with existing rules, and the status of the social discussion on the ramifications of such alterations for future generations when considering whether to publish publications detailing modifications to the human germline.

Ethical Guidelines for the Use of Animals in Research

In their manuscript, authors must provide information on housing, husbandry, and pain management. Authors should consult the Code of Practice for the Housing and Care of Animals used in scientific procedures, the American Association for Laboratory Animal Science, or the European Animal Research Association for additional assistance.

Field studies and other non-experimental animal research must follow institutional, national, or international norms and, if available, be authorized by an appropriate ethical committee. The text must include a declaration confirming compliance with applicable rules and/or proper permits or licenses.
